Ras Malai is one of the most popular milk based sweet in India. As the name goes, ‘Ras’ means syrup or juice and ‘Malai’ means cream. Ras Malai is made from paneer or cottage cheese saturated in sweetened and creamy milky syrup. This widely preferred Indian dessert tastes best when served chilled and garnished with dried fruits. It has been described as "a rich cheesecake without a crust. Ras malai consists of sugary white, cream or yellow-coloured (or flattened) balls of paneer soaked in malai (clotted cream) flavoured with cardamom.
